It's freezin outside and the fur shed chores are done. Got a slow cooker of chili going and gonna make some cornbread in a cast iron skillet. Chili is ground beef/pork and cubed venison/beaver. Browned some chopped bacon in a skillet and used the grease to cook the onions. Threw the whole mess in the cooker with diced tomatoes, 1 beer, mushrooms, red kidney beans and a packet of Carrol Shelby's chili spice. Let 'er cook for about 8 hours. Anybody got a favorite chili recipe? Let me hear it!

I cant believe no one has responded to this one yet, I will find mine and post it tomorrow, I call it " Worlds Best Deer Chili " Its is gooooood lol

Worlds Best Deer Chili
4 lbs of deer meat cut into small cubes 3 lbs of pork breakfast sausage ( hot ) 2 large onions, chopped 4 large garlic cloves, minced 2 cans of diced tomatoes with green chilies 2 6 oz cans of tomato paste 2 – 1 lb cans of baked beans 2 – 15oz cans of kidney beans, drained 1 – 15oz cans of pinto beans, drained 6 table spoons of chili powder 2 table spoons of cayenne pepper 3 tea spoons of cumin 1 table spoon of oregano 2 table spoons of unsweetened cocoa powder 2 tea spoons of sea salt 2 tea spoons of sugar
Brown the pork sausage and drain off the fat, then brown the deer cubes in the pork fat. I rinse the deer meat and sausage with lots of hot water to remove all fat before adding to the pot (I don’t like greasy chili) Add all the ingredients above to your chili pot add a little water and stir up real good. Simmer stirring often for at least 2 ½ hours. More is better. When it’s done I let the pot cool down some and then place the whole pot into the deep freeze to chill it off fast. Once the pot has cooled off I then place it in the refrigerator overnight. Letting the chili sit in the refrigerator overnight lets all the flavors mesh together. The next day I stir it up good again and spoon it into single serving size storage bowls and place them into the freezer, putting aside enough for tonight’s supper of course. Enjoy
I use a 30 quart pot so this is half of what I usually make. I also like to add habanero powder to mine but that makes the sissies cry lol. 2 table spoons of cayenne is about all most people can handle.

Well here is my deer chili recipe: 3lbs ground venison , 1lb breakfast sausage,3 cans light red kidney beans(light because they cut down on gas my wife says lol) two 32oz cans tomato sauce 2 packs williams chili seasoning 2 tbls homemade groung cayenne pepper, 1 whole onionw, 1/2 cup brown sugar, Add the venison and sausage to a skillet and brown along with the seasoning and the onion, then add all of the ingredients to a stock pan let simmer four hours stirring often ,Then its time to chow down ENJOY!!!!!!!!!!

Gotta tell ya, I tried mmaxwell's chili recipe, it's as good as he says it is!!! Be warned, it might bring sweat to your forehead!
